Quick Fix For Saturday's Unexpected Brunch Guests

I have made this recipe many times over the last few years. I have changed the recipes to fit with what I have on hand at the time. It is one of my family favorites, whether I use broccoli, chopped onion, bacon, sausage or ham. It only takes a short amount of time to assemble. I use my large muffin pan, which produces a nice serving for each person. But, if you do not own a pan like this, a 9x13 pan, or two pie pans will also work.
I spray my muffin tin with Pam, then fill half full with broccoli and shredded cheese,(or chopped ham, cooked and chopped bacon, or browned sausage). At this point, I sometimes add a small amount of Feta cheese, too. Then I add the mixtures from the other bowl, of eggs, milk, biscuit, salt, and pepper. I use a small measuring cup and pour this mixture into each half filled muffin tin. I bake in a preheated 350 degree oven for 20 minutes, then add remaining shredded cheese, and bake another 10 minutes, or until lightly browned on top. I let set for a few minutes after removing from pan.
This meal is so quick and easy to prepare, which works for me. The roll is "Pillsbury Crescent Rolls", the little white dish contains butter and jelly, The glass parfait is filled with a combination of fruit yogurt, cool whip and whatever canned or fresh fruit that I have on hand.

That is cruel and unusual punishment to post that amazing looking breakfast when I haven't had mine yet. And even more so, when I discover that all I have in the fridge are a 3 yr old can of navy beans and a celery stalk that may or may not have grown from seed in there. Neither of which seem too appealing to put in a egg dish. Aaaahhh...if ONLY you lived closer!!!
