Yesterday's Flavorful Food Dishes

Like I mentioned last week, the carrot cake came home from school, yesterday. It was every bit as delicious and appealing to the eye as she had said it would be. Interestingly enough, it was baked with Splenda, instead of sugar. which means that I could eat three slices instead of one...just kidding!!



Moist, delicious, and chocked full of carrots and walnuts...just like I want my carrot cake to be. Adding to the appeal of this cake, were each of the individually created carrots on top. How I wish that each slice was calorie free.

Last evening I tried this chicken recipe. My husband requested that I share this on my blog. Actually, all of us enjoyed the taste of this recipe, and I will make it again. It is a quick, simple recipe, with flavorful results. I did not have croutons on hand, so I cut up a small loaf of french bread, into cubes.



Served with a garden salad, this meal could be served for many occasions. I made it in the morning, and baked it in the evening, in time for dinner. I had three frozen chicken breasts that I put in a combination of boiling water and chicken stock. Cooked them for an hour until tender, then cut into cubes. If time does not allow for this process, you can buy a cooked rotisserie chicken at the store, and cut it in cubes. Either way...you may find that this recipe is a keeper.

That carrot cake looks WONDERFUL! How interesting they used Splenda. We use it in our oatmeal in the morning and hubby uses it in his coffee, but that's all. I keep wanting to try it in a dessert...but haven't done so yet.

That chicken recipe sounds terrific, too! Printing that one for future use. = )

I don't know how you make it with all those wonderful desserts. I'd be weighing 200 pounds. I've been telling my 16 year old son about your pastry chef daughter. I've always thought he'd be good at that. He's a singer so I tell him he could be a singing chef. :)

It all looks yummy! And yes...we should get together and share cakes today.

I make a chicken casserole which is much the same...but uses stove-top stuffing instead of croutons.

Wow Judy your daughter is doing such a wonderful job in her class. The carrot cake looks absolutely delicious! You must be very proud of her. Those little carrots look so pretty on top of that carrot cake! You are so lucky to have all of these desserts!! And thank you for sharing the chicken recipe. (Do you know the calorie content on it? Maybe I should ask and just eat - lol!!)

Hi Judy!! I've been like a chicken running around with it's head cut off lately. Don't know if I'm coming or going. I got new furniture for my office so I could be more organized and now I can't find a thing!! I thought I'd have it all put back together by now. Thanks for stopping by. I would die for a piece of that carrot cake!!!!!!!!!!!!!!!!!!!!!! Seriously!!!!!!!!!!!!!!!!!! My fave!!!!!!!!!!!!!!! But with real sugar.... don't do Splenda :)

I bought and am prepared whip up the ingredients for the Swiss Chicken Casserole. I think I'll make one for us and one for Jen. (It seems a lot like Hot Chicken Salad?). Thanks for the suggestion. Looks delish!! (especially with some cole slaw).
