Two Simple, Quick, Delicious Treats

This "Butterscotch - Pecan Focaccia" is a perfect choice if you need to take dessert to a covered-dish dinner, or if you need something to serve with coffee or tea, when friends stop over. It is not good however, if you bake it and let it set on the kitchen counter...too accessible for this family.




Unrolling a package of refrigerated pizza crust dough(my choice is Pillsbury), is the first simple step. Next, I drizzled the melted butter over the dough, scattered the butterscotch chips, brown sugar, and the pecans on top. I used my "Pampered Chef" stoneware cookie sheet to bake this dessert, but any cookie sheet will work. I do recommend putting the oven shelf in the middle of the oven, and with my oven, I baked them at 375 degrees, instead of 400 degrees.The pizza cutter works great, when cutting these bars. I put them in this cut glass dish that I found at the flea market last summer.


I took this package of "Betty Crocker" fudge brownie mix and doctored it up with peanut butter chips and a quick microwave icing. I followed the instructions for the brownie mix and added 3/4 cup of peanut butter chips. I sprayed the 8 inch square pan and then placed parchment paper in the pan. I added extra length to the parchment paper so that it would be easy to remove the brownies after baking and cooled.



I placed the square of brownies on this square silver(not really silver)tray, although they have all sizes of these nice looking trays at the "Dollar Tree" stores. This brownie square looked good sitting on this tray. To make the icing, I put 1/2 cup peanut butter chips, 1/2 cup choc. chips and 1 teaspoon peanut butter in the microwave for 1 minute. Removed and stirred until smooth. I spread it over the cooled brownie square. If desired, you can sprinkle chopped dry-roasted peanuts on the icing. This is a delicious, quick way to whip up a gift or a treat for anytime you need it over the holidays. It does work best to cut this brownie with a plastic knife as stated on the back of the package.


I put a sheet of plastic wrap on the tray, added the brownie, and covered with clear cellophane, tied with the sheer ribbon and added a small candy cane. Another way to wish someone a "Merry Christmas", without much time or expense. I often take store bought mixes and add my own extras, to take the taste up a few notches.

Just wanted to let you know I made the Butterscotch Pecan Focaccia yesterday for our Bible Study Christmas Get-Together and it was a definite hit! Everyone wanted the recipe. = ) I couldn't agree more about how easy this is to make! This will definitely be a repeat at my house.
