My Version of "Fast" Food

One of my husband's favorite sandwiches is a hot, crunchy fish fillet sandwich. I made these for him one night this week. He told me to share these with you, hoping you would enjoy them as much as he does. I served them with a small crock of Bush's baked beans, and a garden salad with poppy seed dressing. So quick, easy and we think... delicious!



This one box of frozen fillets makes five sandwiches(two on each sandwich). I found it helps to follow their directions carefully, like putting the oven rack in the middle of the oven. They are light brown and crunchy when they come out of the oven. A few minutes before I take them out, I lay some slices cheese on them and let it melt. I like to use the Sara Lee soft and smooth wheat rolls for these fillets, and I add tarter sauce to the sandwich. If you like fish...this may be one to try. If not, like my dear sister-in-law, you will skip this post today.



Last evening we had a quick dinner with good friends at a local cafe'. Our friends presented us with a special gift...three fresh peaches grown on his own peach tree that he planted last year. He said that last year the tree only produced a few peaches, but this year there were more, and that they were ripe and ready to eat. What a sacrifical gift...peaches from his prized tree.


This morning I cut up the peaches, added strawberry slices, blueberries, and banana slices to make some fruit salad. I learned from my mother, to add some orange juice to fresh fruit, and stir it all together. I think it makes it taste better. When we eat this fruit later today, we are sure the homegrown peaches will make it... the best bowl of fruit ever! Thanks Nate!

Good Morning Judy! My guys would probably really like those fish sandwiches. I'm glad you recommended the brand of fish to buy. I just never know so I don't buy it. We do something similar with Tyson chicken breasts that come breaded. They are good and quick.

Your peaches look perfectly summery and delicious. :) You are right, that was a sweet gift.

Judy, I enjoyed this especially the fruit. I never thought to add o.j. to fresh fruit. I do at times when I make a smoothie. My husband would love that fish sandwich. I may have to try this for him minus the beans but the salad is great.

I'll have to try your fish sandwich. I'm a seafood lover and that does sound like a great "fast food" lunch.
Bush's beans are my fave. Have you tried their Grillin' Beans? So good.

I think this is what we're going to have for dinner!! Hubby loves fish & chips, and I never think to make it -- I guess I just dont' have much luck with store bought fish filets...but I think he'd like it!

Yes, that's my kind of fast food, too! It's been a while since I made sandwiches like that so thanks for the idea. I do that with chicken pieces often too. And your comment about the bookcases is too funny. Hope my pics are an inspiration to you --do post what you come up with. I might have a few more if I look hard!!

YAY! Fish sandwiches - one of my most favorite food. I could eat fish or seafood everyday of the week. And fresh peaches are my favorite summer time fruit. A delicious blog - now I need to fight a craving for fish and peaches for the rest of the day. =) Or better yet - I'll be over around lunch time. Thanks for your kind comments on my blog. Great homemade version of the fast food fish sandwich! Sneak a fish taco out of the same thinking: the fish, shredded cabbage, cilantro, tomato, onion, mayo, and lots of lime juice in a tortilla. Add salsa if you'd like. Refried beans and spanish rice side dishes and ta dah!

Just like the fish tacos you get in So. Calif and Baja Calif in minutes.

I read this post just before lunchtime and my mouth started watering. Mmm, it looks so good. Thank your husband for suggesting that you share it. I usually don't even look at the frozen fish products because when I have had them I usually haven't cared for them. So, it is nice to see one that you have tried and liked. I only buy Bush's beans as I think they are the best.

How very kind of your friend to share his peaches. What a pretty addition they make to your fruit salad. Orange juice over the fruit is something new to me. I'll have to give that a try!

I'm a fish sandwich fan myself...and always ordered filet-of-fish sandwiches at our local burger place until they took them off the menu. I will have to use your method...and cook them up in my own kitchen. Thanks for sharing.
