Here is the recipe that I mentioned in my most recent post;  This cake is pictured on the post below;

Blueberry Zucchini Squares

2 cups of shredded zucchini
1/2 cup of buttermilk
1 T grated lemon peel
3 T lemon juice
l cup of butter, softened
2 1/2 cups of sugar
2 eggs
3 1/4 cups plus 2 T flour
1 t baking soda
1/2 t salt
2 cups fresh blueberries

Glaze;

2 cups 10x sugar
1/4 cup buttermilk
1 T grated lemon peel
2 t lemon juice
1/8 t salt

Preheat oven to 350 degrees.
Grease 13 x 19 inch pan

In small bowl combine zucchini, buttermilk, lemon peel, and lemon juice.  Toss to combine.

In large bowl cream sugar and butter, till fluffy, add eggs one at a time.
Sift 3 1/4 cups of flour, baking soda and salt.  Gradually add to creamed mixture, alternately
with zucchini mixture.  Mix well.
Toss blueberries with 2 T flour.  Fold gently into batter.
Transfer to greased pan, spread evenly, bake 30-35 minutes, till golden brown.
Cool completely in pan.
Mix glaze ingredients, spread over top of cake.  Let stand till set.

You will thank my sister-in-law for this recipe when you make it.  Everyone at our dinner
did.
