Continuing to Sample Summer's Finest

Saturday evening picnic at the park. What to bring for the dessert? An old faithful, and an old favorite...fresh peach and strawberry shortcake, made the Bisquick way. Always brings smiles to this family.


So very simple and delicious!! Been baking these for many years.
Recipe from the back of the Bisquick box;

4 cups of fresh strawberries (and or fresh sliced peaches)
1/2 cup sugar
2 1/3 cup Bisquick mix
1/2 cup milk
3 Tbsp. sugar
3 Tbsp. melted butter
1/2 tea. vanilla(my addition)
1 (80z) container of cool whip, thawed

MIX strawberries, peaches and sugar(to this I add 1/4 cup of orange juice)
STIR Bisquick mix, milk, sugar, vanilla and butter until soft dough forms. Drop by 6 spoonfuls onto ungreased cookie sheet. I add two shakes of cinnamon sugar to the tops of each shortcake before baking.
BAKE 10 -12 minutes or until golden brown. Split warm shortcakes; fill and top with strawberries and peaches, (we pour 1/2 cup of cold milk on shortcakes and fruit at this point) and a dollop of whipped cream.





Today has been set aside in history, as a time of rest from the many labors of the summer. Hope you all can enjoy a time of rest today(however brief it may be). Happy Labor Day to you!

My favorite shortcake is the one made with Bisquick. I see a lot of sponge cake used around here and it's just not as good in my book. I have never thought to mix strawberries & peaches, but it sure does look yummy. I have both of those fruits on hand. Hmmm... I wonder if I could make a shortcake for dinner without "laboring" too much on Labor Day. :-)

We have Bisquick here in Canada...I've just never tried it. But I think I might need to! A great labour-saving recipe on this no-Labour Day. Thanks, Judy.

I use bisquick too...they are almost like scones to me...I can eat them with good ole butter and be happy! Thank-you so much for your sweet comments! cherry

I too love the bisquick shortcakes recipe, Judy!!! My mom always made it and now I've made it for years as well... Yum! too bad I can't get bisquick in Poland...
