Better Than The" Drive-Thru"
This is a quick and delicious(to my family) dinner. We have tried different already made meatballs(which is my choice when time is limited), and this brand is our favorite. I heated the meatballs on a cookie sheet in the oven, cooked the rice in a pan on the stove. Cooked the sauce in a smaller pan. Actually, I doubled this recipe and froze the other casserole until later. In a sprayed casserole dish, I first put the cooked rice, added the cooked meatballs and then covered with the Bearnaise Sauce. Sometimes, I add frozen peas to the cooked rice. At this point you can put this in a 300 degree oven for 15 minutes before serving. If frozen, cover with foil and put in 300 degree oven for 35 minutes, or until warmed.
