
Last evening my uncle(the great photographer) and aunt(the one who created my beautiful needlepoint pictures), came for dinner. We had one of our families favorite meals, "Taco Pie".

I have been making this for many years. A few changes to the recipe that I make are; I use a 9x13 inch pan, I use 1 and 1/2 pounds of lean hamburger, I use 1 and 1/4 cups of sour cream, and I use 1 and 1/2 cups shredded cheddar. If you follow the recipe exactly as printed, it will be delicious. I found these changes makes it even better.

I serve this pie with a bowl of chopped tomatoes, shredded lettuce, salsa and sour cream. I also take two cans of refried beans and put them in a greased baking dish. We think it is a perfect addition to the meal. So easy to put together. I did the meal prep in the morning because I was gone all day. I put the pie and the refried beans in the oven for 1 hour at 325 degrees. I added extra baking time since it was refrigerated all day.
