Not My Mother's Beef Stew

This time of the year, when the days start to turn cooler, and the leaves start to turn their many colors, often reminds me of the time of year when my mother would make her special recipe of "Beef Stew." The one where she would actually stew the boneless chuck roasts of beef until it was fork tender, then add the vegtables and her many" chosen" ingredients. She still does this once in a while and freezes containers of soup to give as gifts. I have never been able to duplicate her "recipe"...probably because she does not use a recipe. You all know her type...that adds a little of this and a little of that...so you can never really figure out how to do it yourself. She is a very good cook though, so as long as I can figure out ways to be a recipient of her containers of soup, I am happy. But, as for me, my time is so limited right now, that I am content with some of my own concoctions, that taste good and do not take much time to cook. Since I do know a few of her secret ingredients to the beef stew, my version does taste somewhat similar to hers. So...if you are pressed for time, or if you just don't feel like taking the time to make beef stew the "wonderful" way, you can try this way. My husband and my daughter both asked me to share this version, because they like it.

You take a pot, add all the above ingredients, plus 1/2 teaspoon garlic powder, pinch of salt, and pepper. Stir it all together, cook until starts to bubble, and then turn to low and simmer so the flavors blend, for 15 to 20 minutes. Now it is ready to serve. The V-8 juice and brown sugar are two of the ingredients she uses for her soup.

To compliment this soup, here is another one of our favorites..."mini cheese biscuits." These ingredients can be put together early in the day, scooped into greased muffin tins, topped with extra shredded cheese, covered and put into the refrigerator until time to bake right before serving. These biscuits are best served warm from the oven.

Recipe is from the "Fast Fixes With Mixes, Taste of Home Cookbook." The recipe was shared by Chris Rentmeister.
Recipe
2 cups of biscuit/baking mix
1/2 cup shredded cheddar cheese
1/4 cup shredded parmesean(I add this)
2 cloves of minced garlic(I use 1 teaspoon of garlic powder)
2/3 cup of milk
2 Tablespoons melted butter

In a bowl, combine biscuit mix, cheese and garlic. With a fork, stir in milk just until moistened. Use a sprayed ice cream scoop to put in muffin tin. Bake at 400 degrees for 12 - 15 minutes, or until firm to the touch. Enjoy!!!

Using this recipe will give you some extra time to spend outdoors in this beautiful time of the year.

Judy,

I love your new blog look!!! How inviting and engaging just like your personality.

Thank you for sharing the Stew with us. My Mother in law does the "little bit of this, little bit of that" so I can't duplicate anything she cooks either. :) It's just delicious!

Love you.

Mmmm so good. I got together with my grandma a few times for some recipe instructions. I made her let me measure the ingredients that she described as "a little of this". And I got to see what "til it looks right" actually looked like. Now I find I do the same thing sometimes. Ha!

I came over from Lisa's blog, Sharing Life with Lisa. Your blog is beautiful. I will have to visit again.

Rich blessings to you!

I stopped by to visit after reading Lisa Shaw's post about you. I'm so glad I did. But I think I need more time to camp out here. My first impression is "I love your blog." I am going to follow you so I don't lose this link but I will be reading more on the weekend. It's so nice to "meet you".

Blessings,
Debbie

You must be wonderful if you're a friend of Lisa's. LOL.

That's my kind of recipe. My Mom is that type of cook, too. We've recently discovered Banquet (Crock Pot) Hearty Beef & Vegetables. As close to my own Mom's recipe as anything I've ever had! I just might have to give yours a try as well. Thanks for sharing. Have a wonderful weekend! = )

What a great tip for creating a hearty beef stew/soup with little fuss and bother. I'm game to try! And I love your muffin pan...can't say I've ever seen square ones before. Perfect for cheese biscuits!

Your first photo is so beautiful. I love the wreath and how it is lit up.
Yesterday I bought 2 pkgs. of stew beef as they had it BOGO. Fall always puts me in the mood for stew. It is the only thing I make in a pressure cooker. Now you have shown me a much quicker version. I will have to give it a try on a busy night. The cheese biscuite look delicious and I will try those for sure.

Have a wonderful weekend.

Thanks so much for sharing this yummy sounding stew and cheese biscuits recipe! Perfect for those crisp (and busy!) Fall evenings! I'm going to try it next Wednesday (Bible study night).
I happen to be one of those "little bit of this, little bit of that" type cooks, but these days I'm often on the lookout for something that doesn't take a lot of time and is still more like homemade and good!
Have a wonderful weekend Judy-love your Fall decorations!
Blessings to you!

Popping over from Lisa's blog. Loved your blog so am following you (that way I can see you on my dashboard).

I know what you mean, my father baked and cooked the same way.

I tried to watch him bake his bread one day and he was just no help, I tell you! Hahaha.

No measurements, not even necessarily the same way twice, lol!

Nice meeting you! ~ Nan
