There are apples in our refrigerator most of the time, but last week, I found myself with too
many.  I had a recipe that I've wanted to try for some time, and I finally made it  Now, I
would like to share it with you, in case you have too many apples on hand too.

It is "Caramel Apple Salad" and it is delicious!


It is from a cookbook titled, "In the Kitchen With Mary and Martha".


It tastes better when it has been in the refrigerator for one or two days.
I am happy to share the recipe with you;

1 small package of instant butterscotch pudding
1 (8 ounce) container of Cool Whip or TruWhip
1 (10 ounce) can crushed pineapple, including juice
1 cup miniature marshmallows
3 cups of apples, pared and cut into small cubes  ( I used Gala Apples)
1/4 cup of chopped walnuts (optional)

Mix all ingredients together; refrigerate for at least 1 hour before serving.

"Lily of the Valley" flowers have always been some of her
favorite flowers. 
 
 
 The Goldfinch are in abundance this Spring.

Finally, a happy, little smile from my youngest grandson, who lives way too far
away.  His smiles, via pictures, brighten my day every time I see him.  Only a few more
weeks until I get to see him again.

That salad looks awesome....but I'm more interested in seeing more photos of that sweet little boy! How hard that must be for you to be so far from our youngest and her family. Praying for many visits down the road!

Lovely photos. Its so hard being far away from our grandchildren isnt it? Im guessing for you, even though you have some near by, it is just as hard because really we want them ALL near by!
