She Served it Hot From the Oven

Every time I make this recipe I remember it like it was yesterday, even though it was at least twenty some years ago. We visited dear friends of ours, who lived out in the country in Virginia. They warmly invited us into their country home, and there we spent the next two days. The following morning we were greeted with wonderful aromas as we entered their cozy kitchen. Our hostess had just removed this coffee cake from the oven. The rest is history. I cannot tell you how often I have made this coffee cake(or in muffin form) since their memorable visit. It all starts with 1 cup of apple butter.
Here is the quick and easy recipe.
Streusel-topped Apple Butter Coffee Cake
Oven - preheated to 350 degrees
Baking time - 40-45 minutes for coffee cake
20 - 25 minutes for muffins
In a large mixing bowl melt 1/2 cup of butter(1 stick)
Add;
1 1/2 cups of flour
3/4 cup of brown sugar
1 cup of apple butter
1 egg
1 tea. baking soda
1 tea. cinnamon
1 tea. vanilla
Mix well. Pour batter into a square pan or a muffin tin for twelve muffins. I use a Pam sprayed ice cream scoop to fill muffin tins.
In small bowl add;
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup flour
1/4 tea.cinnamon
1/4 tea. nutmeg
1/4 cup softened butter
1/2 cup chopped walnuts(optional)
Mix with pastry blender and sprinkle on top of coffee cake or muffins and bake. Baking instructions are stated above. Enjoy!

I bought 3 big pastel colored wooden clothespins at the dollar store. I spray painted them white and I will use them to give as a gift along with my plate of muffins. I will share the recipe for the muffins and the recipient can use it in the future, as a recipe holder when baking any recipe. To decorate it a bit, I purchased these adorable retro kitchen dimensional stickers from the dollar section of Michael's Craft Store. They had packs of these stickers for 1.oo each. I mounted two of them onto the painted clothes pin. The top one says, "count blessings - not calories"
The second one says, "Queen of the kitchen". Just a simple way to dress up a painted wooden clothes pin.
I cover the muffins with plastic wrap when giving them as a gift.


These stickers are cuter in person. The dimensional way they are created will add a touch of retro to anything from your kitchen.



You can also use the small, blank index cards and share any message you want, and clip it with a clothes pin. These clothes pins stand nicely by themselves and works beautifully in holding a recipe so that it is easily read while baking.
I know all of us are watching our sugar intake, but a small piece of this coffee cake promises to add a touch of sweet memories to your day...or maybe like me, those memories will last some twenty years. Thanks Patty for a special recipe!

Judy, I can just imagine what these might taste like. I love anything apple and those spices are designed to make apple recipes wonderful. I copied and saved this and will have to find some good apple butter to start with. Your elegant and thoughtful gift idea is a keeper for sure. Thanks for taking the time to share such a good idea!
